吐司是家庭常見的食物。細緻綿密的質地在時間、火候催化下,可烘焙出不同層次的口感與香氣,皆是串連家溫暖的味道。
位於大安區大樓轉角的「Niko Bakery日香高級吐司專門店」,空間設計團隊JSC Studio不從專業烘焙的角度切入,而以「家」為主軸,從動線、格局、色彩及材質,傳遞品牌價值與溫度……
隱身於台北市大安住宅區中,前身為幼稚園的轉角空間,為「Niko Bakery日香高級吐司專門店」的預定基地,空間設計團隊經品牌研究及地區勘查之後,將店面定調以居家形象出發,融入社區環境中。所謂的居家意象,並非僅只是從觀看者的角度營造,「由居家主人的角度出發,創造出『家』的環境與空間感。更藉由與社區公領域的距離感,帶出私領域的隱密性。」JSC Studio主理人鄭士傑表示。他將店門前寬敞人行道及植栽高台,作為參訪者觀看暨到訪的距離:上階梯、經過綠意植栽的外玄關,穿越一扇有溫度的木門,才進入到居家的內玄關…通過儀式性的動線設計,營造出「歡迎來到我家廚房」的拜訪情境。
內部空間仿若為居家廚房的放大版,後端為烘焙廚房,中間為商品陳列架,前方為中島櫃檯;觀者透過鏤空的陳列架,可窺視整個吐司生產流程,帶來新鮮現做、上架、打包的美好購物體驗。一側則為週邊商品的陳列櫃,如居家五斗木櫃及木架,框架出家的端景,而下方更設置多個儲藏抽屜,可作為商品的倉儲空間;一側為餐飲區及試用區,以木質椅、圓桌、吊燈及小畫框等溫馨道具,及後方盛裝電器、餐盤道具的平台,佈置成居家早餐餐桌的場景;值得一提的是,設計師於餐飲區前方設置一個落地窗,外部更安置裝飾性門扇,猶如商店櫥窗,亦像居家的窗台,使外部觀看者有如窺探別人家中溫馨用餐的模樣。
整體顏色及材質,以木質調傳達居家溫度,設計師更選用淺到深三種色調的木色搭配,巧妙演繹土司酥烤過程的色度。外觀以白色的露營風格布幔,以及藕色棚架作為跳色,妝點出活潑又不失優雅的氣質。內部則輔以白作為配色,使得木質空間不過於沈重;此外,更搭配中間色帶的不銹鋼銀以及大理石白,藉由金屬及石材反射,創造空間的流動感,亦能推高吐司店質感,展現出高級時尚的風格。
設計過程暨成果亦有巧思。裝修期間,JSC Studio特以白色無縫木作圍起,並結合品牌設計師Johnnp設計圖像,打造一面出與街坊鄰居對話的留言板,作為開店前的宣傳看板。而裝修完成後,設計師更於櫃檯後方安裝一座跑馬燈,作為空間無聲的節奏感;此外,JSC Studio更為此空間設計專屬的家具,抽繹居家暨公園常見的元素,打造出時尚的桌椅:精緻的桌面搭配粗獷可愛的桌腳、仿公園椅及教堂椅的木長椅,皆有與吐司形似的圓潤可愛造型。
White bread is one of the most common food in the household. The warmth of home were linked with the tastes and flavors in various levels produced from the bakers.
Niko Bakery locates at the corner of a building in Daan district. JSC Studio focused on the theme of “home feel” to deliver its brand and warmth from the flow, setup, colors, and materials.
Niko Bakery locates at the corner space previously used as a kindergarten at a residential area in Daan district. The designer team studied its brand and location, decided to make the home-feel theme of the bakery, in order to integrate into the community. “So-called home-feel image is not only built from the perspectives of the viewers but also created with the home-liked environment and sense of space. The distance sophisticated kept from the public sectors of the community brought a sense of privacy of this bakery,” said JSC Studio founder, Shane Jeng. He used the wide sidewalk and planation platform to create the space for viewers and customers. Customers need to step up the stairs, pass the entrance, and push open a wooden door to access the doorway of Niko Bakery. The design of ritual-liked flow brings the customer into the scenario of “welcome to my kitchen.”
The inner space of Niko Bakery is an enlarged household kitchen. The back-end is the baking kitchen, middle part is where the product shelves at, while the island counter locates in the front. The white bread producing process can be observed through the hollow out shelves. Customers can visually participate in the baking, product launch, and packaging for a pleasant shopping experience. One side is the display cabinets such as wooden dressers and frames for branded products. Underneath the dressers, there are multiple drawers for product storage. The other side is the dining and tasting area decorated with wooden chairs, round table, ceiling lamp, and small frames on the wall combining with the platform for electrical appliances and dishes – demostrating a household breakfast table. Notably, the designer arranged to setup French windows in front of this dining area. There is also a decorative door on the outside of the window so that the show window of the bakery can be also seen as windowsill of a house. By looking into the windows, it feels like family dining at home happily.
Wooden materials are used to bring up the warmth of home. Three different tones of the wooden materials match with one another, expressing the color of differently baked white bead. Camping-styled curtain and pinkish gray shed frame on the outside bring out the cheerful while elegant taste. Inside, the color white is used to go with wooden materials so that it is not too heavy in the color. In addition, the reflections created by sliver-steel and while-marble allow the setup to flow smoothly, advancing the quality of this bakery for a high-end fashion style.
During the constructing period, JSC Studio built up a message board with white wooden materials and the graphic design of Johnnp as the billboard for advertising before the grand opening. An electronic scroll were installed in the back of the counter for the silent sense of tempo after the renovations were done. Moreover, JSC Studio used the elements frequently seen in the household and parks to design the furniture for Niko Bakery. White bread shaped round table go with rugged legs not only to imitate the wooden benches in the parks or churches but also to build up the fashionable sense.
